The skin is constantly being regenerated and it contains tissues with high cell proliferation rates; therefore skin requires adequate amounts of protein, carbohydrate, oxygen and fats to fuel the high turnover of cells.
Your diet is an important source of several vitamins essential for the normal functioning of skin, including vitamins A, C, E and several of the B group vitamins. Vitamin A (retinol) is well know for skin function and fighting premature againg. Vitamin C is the predominant water soluble antioxidant vitamin in skin and required for the correct maturation and repair of connective tissues such as the dermal layer of skin. B vitamins are requited for optimal skin health include riboflavin (vitamin B2), niacin (vitamin B3) and pyridoxine (vitamin B6) as these vitmains help with cell renwal , prevetion of oxidation and reducing cell damage.
Vitamin E is also considered an important antioxidant that protects the skin from free radical damage.

SUPER C KOHLRABI SLAW
(VEGAN| GLUTEN-FREE| VITAMIN &FIBER RICH)
Inspired by a recent trip to the local farmers market this super simple slaw is not only loaded with skin loving vitamins but also a great thing to make in bulk as it will keep in the fridge for a few days. The main ingredient is Kohlrabi which is a great source of Thiamin, Folate, Magnesium and Phosphorus, and a very good source of Dietary Fiber, Vitamin C, Vitamin B6, Potassium, Copper and Manganese.
2-3 organic kohlrabi, peeled and grated or chopped , 2 organic medium carrots, peeled and grated 1/2 organic red onion, grated 1/4 cup organic raisins 1/4 cup flax oil
1/4 cup fresh lemon juice 1 tablespoon cider vinegar 1 teaspoon salt
1 teaspoon black peper

STEP 1 - Chop or grate peeled kohlrabi. For extra nutrient boost hop in the stems and leafs

STEP 2 - Grate carrots and toss in bowl with the kohlrabi and fresh lemon juice.

STEP 3 - Combine all ingredients in bowl and mix well. Refrigirate for a few hours to allow for the delicious flavours to release and stir before enjoying the Super C Kohlrabi Slaw.
